It is a true pleasure for Sushi Social to welcome Chefs Alejandro Pérez and Ismael Olivar from the Michelin Recommended restaurant Hotaru in Madrid.

Hotaru is renowned for its high-quality, unique blend of modern Japanese cuisine that utilizes premium ingredients from around the globe. Alejandro Pérez is a Mexican chef who has honed his craft in many of the world's most prestigious Japanese kitchens. He specializes in traditional sushi preparation with a strict emphasis on fresh ingredients and technical precision. Under his leadership, Hotaru has successfully maintained its place in the Michelin Guide for three consecutive years.

Ismael Olivar serves as the Head of Innovation for Grupo Costeño, one of Mexico's leading hospitality groups which operates Hotaru among others. In recent years, he has focused extensively on Japanese and Nikkei cuisine. Chef Olivar's methods naturally bridge the gap between Mexico and Japan, creating a culinary experience where precision, umami, and bold Mexican flavors are at the forefront.
