Mikko Verneri Pakola is a Finnish chef who has made a name for himself at the restaurant Brasa in Helsinki, Finland. With an impressive career that includes work in Michelin-starred kitchens such as OLO in Helsinki, Mikko has established himself as one of Finland’s leading chefs. His journey has been diverse, including membership in the Finnish national culinary team from 2013 to 2023 and securing second place in Finland’s Bocuse d’Or qualifiers. In 2024, Mikko was honored as “Head Chef of the Year” in Finland.
Mikko’s culinary philosophy is deeply rooted in his respect for nature and its offerings. He emphasizes that each dish should be an exciting interplay of different elements, allowing each ingredient to shine remarkably. Mikko particularly enjoys creating complex, refined techniques in his cooking, providing guests with an unforgettable dining experience.
In March 2024, Mikko participated as a guest chef at Brasserie Kárnes during Reykjavík’s Food & Fun Festival, showcasing his innovative approach to Finnish cuisine. Later that year, he competed in Finland’s national Bocuse d’Or selection, further solidifying his reputation in the culinary world.
Brasserie Kársnes is a cozy restaurant in an up-and-coming neighborhood. One doesn’t always have to go downtown to enjoy food and drinks. We have our regular customers who have been coming here from the get-go, which has created a lovely and personal environment.
