DANITZA ALPACA

Danitza Alpaca, an Arequipa-born chef, has built a distinguished career in international fine dining.

She began her training at Universidad San Ignacio de Loyola and continued at the Paul Bocuse Institute in Lima, where she was selected as one of only 20 candidates out of 400 applicants. Her professional experience includes internships at renowned restaurants such as Atrio in Spain, D.O.M. in Brazil, and Mugaritz in San Sebastián. In addition, she worked at Astrid & Gastón in Peru and led the kitchen at Oroya in Madrid, where she fused Peruvian traditions with contemporary techniques.

In 2022, Danitza was awarded the “Food for the Spirit” prize at the S.Pellegrino Young Chef Spain–Portugal competition, highlighting her commitment to the essence and roots of Peruvian cuisine.
Danitza joined the Manifesto 13 project as executive chef in the summer of 2025, and by the end of that year the restaurant was included in the Michelin Guide’s list of new Bib Gourmand restaurants, thanks to its author-driven cuisine with Italian and Peruvian roots.

Apotek Kitchen + bar is an exciting restaurant located in one of the most beautiful corners of Reykjavík. The restaurant is casual-smart, offering delicious food in a vibrant atmosphere and stylish surroundings. The menu is a fun mix of Icelandic and European cuisine with a smoking hot Argentinean grill.
