PACO OMAÑA

Chef Paco Omaña will be our guest chef at Sumac this year. He is an experienced and creative culinary professional who has developed his distinctive style across various parts of the world. Paco’s approach and working methods are largely shaped by his time at the two-Michelin-starred restaurant Fäviken in Sweden, where he worked under the guidance of Magnus Nilsson. His style continued to evolve when he later became head chef at the Middle Eastern restaurant Java in Portugal.

Paco draws inspiration from food cultures around the world, including North Africa and the Mediterranean. He combines ingredients in a modern and playful way, with a strong focus on the farm-to-table philosophy, allowing fresh and seasonal produce to truly shine. The result is a personal and flavour-driven dining experience where sustainability, quality, and the joy of sharing a meal take centre stage.

Sumac Grill + Drinks is led by Chef Thráinn Freyr Vigfússon and culinary partner and Head chef Sindri Freyr Mooney, together creating an Icelandic cuisine seduced by flavors and flair from the coastline of North Africa to Lebanon – yet with the quintessential Reykjavik mood.
