Cesare Battisti – chef and oste of Ratanà in Milan – is a leading figure in modern Italian cuisine, blending tradition with innovation and a strong commitment to sustainability.

After early years in Milan’s top kitchens and worldwide experience aboard cruise ships, Battisti returned to his roots, managing Ristorante Solferino and Trattoria della Pesa before co-founding Ratanà in 2009. There, he reinterprets Lombard cuisine with a modern touch, focusing on high-quality ingredients and responsible sourcing.

A Slow Food Alliance member since 2010 and former Chef Ambassador of Expo 2015, Battisti is also Secretary General of Ambasciatori del Gusto, promoting Italian culinary excellence.

Expanding his vision, he launched Remulass (2021), a vegetable-focused bistro, Pastificio Ratanà (2022), a fresh pasta shop, and Silvano (2023), a convivial wine bar. His work continues to shape contemporary Italian dining, balancing heritage with sustainability and social responsibility.
