Chef Carlos Barragan discovered his true passion for gastronomy at a young age while preparing meals with love for his siblings. At just 19 years old, he made the bold decision to leave a career in programming to dedicate himself entirely to the culinary arts. His philosophy is grounded in creating unpretentious food that prioritizes depth of flavor above all else. After honing his craft in some of Mexico City's most respected kitchens, including Campobaja and Expendio de Maíz, Carlos developed a personal cooking style free of ego.

He currently serves as Head Chef at Esquina Común, a Michelin-starred restaurant in Mexico City. There, alongside his mentor Ana Dolores, he curates seasonal Mexican cuisine that operates without rigid rules. Guided by a fresh and youthful vision, his dishes remain deeply respectful of the country’s rich culinary traditions. Carlos is committed to fostering a collaborative and positive culture within his team, and he is driven by the genuine joy guests experience when tasting his creations. He arrives at Food & Fun eager to share his heritage and explore new flavors.

We are loco about taco, tostadas, fajitas, quesadilla and other Mexican delicacies, made with fresh Icelandic ingredients.
