COLIBRÍ JIMÉNEZ

Colibrí Jiménez's work as a chef and researcher of traditional Mexican cuisine and promoter of gastronomic cultural tourism in the country, is notable and recognized. The Chef has created links and alliances with producers, brands, and governments, bringing Mexican cuisine to countries such as: Cuba, Colombia, France, Italy, Spain, Canada, China, India, and the United States. Colibri is the author of several cookbooks and has participated in international television series. She has a specialty in sustainable food from Harvard University. She is currently a founding partner of Tierra de Nadie, a gastronomic and cultural space in Mexico City where she works with the properties and benefits of Mexico's biodiversity.

Skreið is a Basque inspired restaurant and bar on Reykjavík's main street, Laugavegur, that offers a wide selection of tapas, wine and cocktails. For the 2025 edition of Food & Fun we welcome guest chef Colibrí Jiménez from Mexico.
