Chef Tom Cook is set to be a guest chef at Finnson Bistro this year! His culinary journey began in 1996 under the mentorship of esteemed chef Gary Rhodes at City Rhodes, where he contributed to the restaurant earning a Michelin star. Tom further honed his skills at renowned establishments such as Le Gavroche under Michel Roux Jr., The Capital Hotel with Eric Chavot, and Midsummer House alongside Daniel Clifford. His international experience includes refining his pastry expertise in Paris and serving as sous chef at Pier Restaurant in Sydney.
Upon returning to London, Tom assumed head chef roles at Tom Aikens Restaurant and Le Pont de la Tour, where he also conducted popular cookery classes. In 2015, he became the executive head chef at Skylon, and since 2018, he has led the culinary team at Smith & Wollensky London. In March 2024, Tom showcased his expertise at Reykjavík’s Food & Fun Festival, serving premium USDA Prime beef from Smith & Wollensky.
Tom’s culinary philosophy emphasizes quality, seasonal ingredients, and consistency. He believes in crafting dishes that highlight a few exceptional components, allowing each element to shine. Tom is eager to collaborate with Finnson Bistro and share his passion for outstanding cuisine with their guests.
The Finnsson family consists of experienced professionals from the restaurant industry and has now opened the restaurant Finnsson Bistro, located on the 3rd floor of Kringlan. The focus is on simple yet flavorful food, with a diverse menu ensuring that everyone can find something to their liking.
