Ilkka Isotalo is a renowned Finnish chef and a leading voice in food culture, known for his deep respect for local and natural ingredients. His culinary journey began in 1980s Rauma, where he learned the value of high-quality, seasonal produce by grinding meat with a hand-cranked grinder and preparing freshly caught herring alongside his mother. Berries were foraged from nearby forests, and the family’s vegetable garden provided the foundation for home-cooked meals and preserves—an upbringing that shaped his philosophy as a chef.
With nearly three decades of experience in top kitchens across southern Finland, Isotalo has become a key figure in the Finnish restaurant scene. As the head chef of Ravintola C (2008–2022) in Tampere, he championed hyper-local ingredients, turning nature’s bounty and small-scale farm products into innovative dishes. His dedication to quality and sustainability earned Ravintola C the prestigious Restaurant of the Year award in 2011 and a place on Finland’s 50 Best Restaurants list every year since its opening.
Isotalo’s leadership in sustainable gastronomy has been widely recognized. He has been honored with the PRO Award for his contributions to responsible cooking and was inducted into the esteemed Chefs’ Chef Academy. His talent was further highlighted in Restaurant Världen’s Chef of Chefs list in 2017. Under his guidance, Ravintola C also gained recognition in the White Guide Nordic (2014–2020) and the sustainability-focused 360°Eat Guide (2019–2021).

Brút Restaurant is a, Michelin recommended, high end casual restaurant located in one of the oldest and most prestigious buildings in Reykjavík. The menu of Brút consists mostly of seafood sourced from the surrounding oceans. It is a menu that changes seasonality depending on availability from nature, wether it is fish, meat or vegetables.
